Chocolate Zucchini Cake
in a crock pot

½ c oil
1 c brown sugar
4 eggs
1T vanilla
½ c  buttermilk
2½ c whole wheat flour
4T cocoa
2 tsp baking soda
½ tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 c grated zucchini
2 T dried cranberries (optional)
1) Blend oil and sugar well. Beat in eggs ‘til
creamy. Add vanilla and buttermilk.
2) Combine dry ingredients and slowly blend into
sugar mix.
3) Mix just enough to blend lightly.
4) Add grated zucchini and cranberries.

a) Turn slow cooker on high & spray with oil. Line
bowl with waxed paper. Spray with oil. Pour cake
batter into bowl and cover.  
b) Cook for 2 hours (check after 1
½ hrs.).

recipe can be halved for a smaller crock pot
