Green Beans & Potatoes
in Chunky Tomato Sauce

1½ T olive oil
1 garlic clove, minced
1½ c diced red potato
½ c chopped celery
½ tsp salt
1¼ lbs. green beans, trimmed
¼ c water
¼ c chopped fresh cilantro
½ lb plum tomatoes, peeled & coarsely
¼ tsp ground black pepper
¼ tsp ground red pepper
1) Heat olive oil in large skillet over medium-high heat.  Add garlic to
pan; sauté 30 sec, stirring constantly.
2) Add potato, celery, salt & beans; sauté 1 min.
3) Add ¼ c water; cover & cook 5 mins., or until beans are
crisp-tender.  Add cilantro & toms.
4) Cover, reduce heat, & cook 4 mins. or until toms begin to soften,
stirring occasionally. Stir in peppers.
