Pesto
1 full c basil leaves
½ c extra virgin olive oil
⅓ c pine nuts*
1 c good quality Parmesan
cheese
⅓ c romano cheese
salt to taste
chopped garlic to taste

*or cashews!
1) Put basil in food processor.
2) Add oil, pine nuts & pinch of salt.
3) Blend ‘til smooth
4) Add cheese & blend again ‘til smooth.
5) Taste & add garlic & more salt if desired.
